A kappamaki (河童巻) is a thin roll (hosomaki) sushi with a single cucumber slice in the center.
Kappamaki are named after the Japanese kappa monster. Kappa monsters love cucumbers.
Kappamaki are popular with young children in Japan who haven't yet acquired the taste for more exotic types of sushi. Amongst adults, Kappamaki are often consumed to clear the palate between fish and other types of food.
Kappamaki are also popular in Western sushi restaurants.
