Why are there no female sushi chefs?

You're right there are very few female sushi chefs. In fact, most Japanese women who want to become sushi chefs have to leave Japan.

The reason — it's always been that way and it's difficult to change.

I've heard male sushi chefs say that women's hands are too warm or they can't handle the stress of constantly working with sharp knives etc ...

The fact is that women make excellent sushi chefs. It's an increasingly popular profession for Japanese women overseas.
